Sesame Oil Braised Chicken

1 whole chicken
2 - 3 cups chicken stock
10 pc mushroom, soaked in water
1 slice ginger
5 cloves garlic, sliced
1 stalk spring onion, cut lengthwise
3 tbsp oyster sauce
2 tbsp light soya sauce
1 tbsp sesame oil
1 tsp pepper
150ml cooking oil
Directions for Sesame Oil Braised Chicken
- Cut chicken into smaller pieces and set aside. Heat a Corningware Retroflam wokpan and pour in cooking oil. When warm, add garlic and ginger, cooking slowly until fragrant.
- Add chicken and stir briefly, till 40% cooked. Add chicken stock, oyster sauce, soya sauce, sesame oil and pepper.
- Braise for 15 minutes. Add mushrooms and continue to cook for another 20 minutes.
- Add spring onions before serving on Corelle plate.
