Ingredients

1 Salmon fillet
¼ cup Sliced pitted black olives
¼ cup Chopped green pepper
¼ cup Chopped red onion
5 cherry Tomatoes, quartered
¼ cup Tomato paste

Directions

  1. Preheat oven to 200°C. Place salmon on a Pyrex oblong baking dish.
  2. Mix all ingredients and spoon over the salmon.
  3. Bake 18 - 20 minutes or until the salmon flakes easily with fork and serve immediately.
