750 g of peeled potatoes

500g peeled sweet potatoes

1 big onion (thinly sliced)

1 tbsp olive oil

6 eggs, beated

450ml fresh cream 450 ml

1/4 cup parmesan cheese (grated)

2 tbsp thyme

1/2 cup of Parmesan cheese (for topping)

Salt and pepper for seasoning


  1. Preheat the oven to 180 °C
  2. Slice potato and sweet potato until 5mm thin
  3. Fry onion in a pan until caramalised for about 5 minutes.
  4. Combine all eggs, fresh cream, grated parmesan, thyme, salt and pepper into Pyrex bowl and mix
  5. Oil a Pyrex baking dish and lay the potatoes, sweet potatoes and fried onions in alternate layers. Pour a thin layer of beaten egg between the layers of potatoes and sweet potatoes. Place the Parmesan cheese for topping.
  6. Place in an oven and bake for 30mins
  7. Cool and serve when ready
