Chicken Salad

3 chicken wings or 1 breast (skin peeled)

300 g Rocket leaves

100g Purple cabbage, finely chopped

3 Tomatoes, cut into small pieces

100g Lettuce

1 tsp salt

1 tsp sesame oil

2 tsp of grated ginger



1 tsp vinegar

1 small onion, sliced

2 cloves garlic, crushed and minced

1 tsp sugar

1 tbsp olive oil


  1. Marinate chicken with salt, ginger, and sesame oil on a large dish for 30mins
  2. Steam chicken until soft and shred
  3. Put some lettuce on the dishes. Place rocket leaves, cabbage, tomatoes on lettuce and shredded chicken
  4. Warm the olive oil in a frying pan, fry garlic and onions until fragrant. Add vinegar and sugar to caramalise
  5. Cool the dressing, and spoon generously over the salad.
